Baking: Festive cupcakes

Hello everyone. I know it’s been a while since I did a recipe post but I promise there will be many more coming up over Christmas. I found this festive recipe for cupcakes on the Baking Mad website. The cupcakes are very easy to make and as with any recipe, you can change any ingredients you don’t like. The photos show the order in which you pop all the ingredients into the bowl and the recipe can be found at the end of this post.

I actually plan on making these cupcakes again. Next time I wont be using cocoa but will be adding extra winter spices.

 What you need to make 12 festive cupcakes:

150 grams Butter at room temperature
150 grams Golden Caster Sugar
3 Free Range Eggs
125 grams Self Raising Flour 
25 grams Cocoa Powder
0.50 tsp Baking Powder
0.50 tsp Mixed Spice
50 grams Raisins
Icing:

50 grams Butter
200 grams Icing Sugar 

Milky Way Stars/Green glitter 
Sprinkle Decorations 

I have been making a list of Christmas baking recipes via Pinterest. I plan on making a lot of treats over the holidays and will also start to put more effort into using dairy free alternatives. Avoiding butter, milk and cheese has made a huge difference to my skin. Sadly it means that I miss out on pizza, coffee ice cream, cheesecake and other such delicious food.
