Yes, you read that right. I’ve taken those crunchy, minty sticks of delight, smashed them up and made them into cookies.
The most important thing to remember when you’re baking is that there are no rules. You can do whatever you want and that’s just what I did for my Matchmakers cookies.
I’ve found myself making cookies on demand at around midnight over the last few weeks. I always use the same recipe and then add something exciting. The basic recipe I use is one I found somewhere amongst the first page of Google about a month back. It’s probably changed a little since I started using it so feel free to do a quick search or use mine. Most recipes are the same when it comes to cookies.
100 brown sugar
125g caster sugar
A dash of vanilla extract
1/2 tsp salt
225g self-raising flour
magic ingredient: 1 box of mint/orange Matchmakers
First you need to grab a big bowl, add the sugar and butter then mix.
Next chuck your eggs into the mixture and add a splash of vanilla extract.
Smash up your Matchmakers. This can be done by breaking them with your hands or for a finer result simply pop them into a plastic bag and knock them about with your rolling pin.
Get your baking trays ready and put little balls of cookie dough onto it. Press each one down slightly but be careful you don’t over do it. You don’t want your cookies expanding too much and sticking together.
Leave in the oven for around 10 minutes ’till they turn golden.
Whip them out onto a cooling rack for a few minutes before serving with a cup of tea.
Don’t forget that you can use any chocolate you have knocking about the house. I’ve just spotted that Matchmakers have introduced honeycomb - I’m going to have to try doing the cookies with these next time.
