Let’s make Kimchi

My friend told me about this delicious salad and I knew I had to share it with you. I’ve heard that it’s one of Jamie Oliver’s recipes, or at least it’s based on it. So, thanks Jamie, this is one of my favourites!

It’s very simple to make and I’ve found that it’s a good way to avoid having too many carbs in the evening.

What you need:
Chinese leaf (only need half)
Bunch of radish
Red onion
Lime 
Chilli 
Ginger

Chop the chilli up into tiny bits and pop into a big bowl – I use one but it depends on the type of chilli you have.

Next you need to chop the ginger into small bits. I tend to use just over a thumb sized piece, I like my salads with a fiery kick!

Slide them into the bowl.

Can you guess what’s next? Yep, thinly slice the red onion. I told you this was simple!

Grate the radish into the bowl.

Slice the Chinese leaf in half.

Chop as finely as possible and then slide it into your bowl.

Here’s the last bit! you need to add some salt and then squeeze half a lime into your salad.

Get your hands in there and toss it about. This can get a little messy, but it’s worth it!

I like to keep the Kimchi chilled in the fridge and then serve.
