Hello everyone. I know it’s been a while since I did a recipe post but I promise there will be many more coming up over Christmas. I found this festive recipe for cupcakes on the Baking Mad website. The cupcakes are very easy to make and as with any recipe, you can change any ingredients you don’t like. The photos show the order in which you pop all the ingredients into the bowl and the recipe can be found at the end of this post.
I actually plan on making these cupcakes again. Next time I wont be using cocoa but will be adding extra winter spices.
What you need to make 12 festive cupcakes:
| 150 grams | Butter at room temperature | |
| 150 grams | Golden Caster Sugar | |
| 3 | Free Range Eggs | |
| 125 grams | Self Raising Flour | |
| 25 grams | Cocoa Powder | |
| 0.50 tsp | Baking Powder | |
| 0.50 tsp | Mixed Spice | |
| 50 grams | Raisins |
Icing:
| 50 grams | Butter | |
| 200 grams | Icing Sugar | |
| Milky Way Stars/Green glitter | ||
| Sprinkle Decorations |
I have been making a list of Christmas baking recipes via Pinterest. I plan on making a lot of treats over the holidays and will also start to put more effort into using dairy free alternatives. Avoiding butter, milk and cheese has made a huge difference to my skin. Sadly it means that I miss out on pizza, coffee ice cream, cheesecake and other such delicious food. If any of you also have to avoid dairy then check out Pinterest for loads of dairy free versions of ice cream and Nutella (essentials).

I don’t have to avoid dairy technically but I do avoid it a lot as it gives me a very dodgy tummy if I have too much milk products. I am ok with cheese if I don’t go crazy and it is actually one of my favourite foods. Me and the boyf call Christmas our ‘cheese and biscuit season’ where we allow ourselves to eat as much cheese and biscuits as we like for 2 full weeks over Christmas and NY. This years ‘season’ starts on Saturday and I CAN’T wait!! Lol

Milky Way Magic Stars are my favourite! I think I’d be tempted to scoff the whole pack before getting the chance to decorate the cakes with them! Lovely looking cakes x x
these look scrummy! I tried a similar recipe out but put chai powder in instead of vanilla, and put chai in buttercream icing, they were delish!
